Vanilla cuppycakes! ^^

I just like to share this recipe for vanilla cupcakes with everyone.. I admit that even though I love baking, I've never really succeeded with cupcakes. They either don't rise at all or taste rubbery. Not nice trust me. But this recipe I found online and tried recently proved me wrong. I actually do have a hand at baking cupcakes and it's delish! What I loved most about this recipe is that the cupcakes were not too sweet, neither is it dry or overly buttery.

First batch a success! Whee ^^

And this is how I leave my cupcakes to cool.. On my marble dining table. Heh

So anyway, here's the recipe!

Vanilla Cupcakes, makes 24 (I manage to make 32 though)

200g butter, softened                                      (A)

370g castor sugar (I reduce to about 320g)       (A)

2 tsp vanilla essence                                        (A)

4 eggs                                                           (B)

400g Self-rising flour                                      (C)

1 cup (250ml) milk (I use fresh milk)               (D)

Preheat oven to 350 F/180C. Cream (A). Add (B) one at a time. Combine with (C) and (D) in alternate batches. Stir until combine. Bake for 15-20mins (I baked mine for 20mins in a preheated oven and they turned out a nicely golden colour). 

Easy peasy right! Have fun trying this recipe! ^^

Supp. It's a chilly Wednesday evening and I'm home, lazing on the couch, watching the telly and having ice cream straight from the tub. Oh yes I've been a naughty girl. Haha. Pardon me if you agree but ahhh... What a meaningless post.

This is so purposeful. Nobody looks into the camera while eating ice cream really. Ahahha *shrugs*

And here I am, shamelessly advertising Anderson's Rum & Raisin ice cream. Awesome stuff ^^

Mmm tis' good.

Voilaa. After several minutes, I think I had about 1/3 of the pint at the end, maybe even 1/2. Ahaha *lick lips*

By the way, Anderson's Rum & Raisin ice cream is surprisingly good. It's not too heavy, and the raisins are soaked in just the right amount of rum to give it that tiny bit of kick without the overwhelming dose of syrupy sugar rush. I don't particularly enjoy rum as an alcoholic beverage but it's not too bad eaten as a dessert in this form. YUMMEH ^^
